Profiteroles filled with vanilla creme patissiere, made in the shape of a pyramid with toffee. Possibly the most classic and well-known French cake, our croquembouche is assembled by hand with beautiful golden toffee, and is truly a showpiece for your celebration. 
We have the following options for decoration:
- plain (toffee)
- green crushed pistachio
- white pearl sugar
- silver or gold leaf
Please mention your preferences for decoration in the "Order Notes" box (at the bottom of the screen) when placing your order. Or, you can email us orders@larenaissance.com.au or telephone and we will add the decoration request to your order. 
This cake is available in larger sizes than indicated, please contact us either by email or phone with your specific request and one of our staff will be happy to assist you. Please note we do not offer delivery for our croquembouche cakes, nor do we send them by courier due to the fragile nature of the cake. 

 

STORAGE AND CARE FOR A CROQUEMBOUCHE:

A few tips to ensure the easiest care and serving of your croquembouche cake

- please choose a collection time as close as possible to when you wish to cut and serve the croquembouche. All cakes finished with caramel like this will begin to humidify as soon as they are made

- do NOT store a croquembouche in the fridge. A cool, air-conditioned room is best, or a place out of direct sunlight.

- to serve the croquembouche, begin at the top and use the back of a knife or spoon to 'tap' and break the caramel. This will allow you to break the cake into smaller pieces for serving

 The appearance of the cakes may differ slightly from the website photos, due to the creative licence of the chef, but the taste and appearance still remain of the highest standard.
